5 Stars!

Mostly vegetarian and infrequently vegan, the recipes in Lucky Peach Presents Power Vegetables! are all indubitably delicious.

The editors of Lucky Peach have colluded to bring you a portfolio of meat-free cooking that even carnivores can get behind. Designed to bring BIG-LEAGUE FLAVOR to your WEEKNIGHT COOKING, this collection of recipes, developed by the Lucky Peach test kitchen and chef friends, features trusted strategies for adding oomph to produce with flavors that will muscle meat out of the picture.

PETER MEEHAN has written for the New York Times, Saveur, and Travel & Leisure and has collaborated on several books.

As a vegetarian I feel like I hit the jackpot with this book! What a wonderful, creative, and informative book - as well as being fun to read!

Tons of great full color photos. Amazing original recipes, and - I loved the pages with interviews and blurbs with restaurant chefs! That was a nice added touch. I even loved the introduction! How many times can you say that about a cookbook? How many times have you even read the introduction of a cookbook?

Well I flagged so many recipes, but here are a couple I loved -

I love squash and am always up for new ideas of how to use it!

And I love burritos! They are so easy and fun to make. Here's one I never thought of -

All the ingredients in this book are pretty easy to obtain too. They are not obscure items that you have to go to a special store for. This book is NOT totally a vegetarian book - there are recipes for chicken and seafood. Of course I would leave those out or replace them with tofu LOL. But they are there if you want them.

If you are a vegetarian like me or are just looking for some fresh healthy ideas for veggies - look no further. This is THE PERFECT BOOK!

I voluntarily posted this review after receiving this book from Blogging  for Books and Penguin Random House. Thank you!
