MY THOUGHTS -
As a vegetarian I feel like I hit the jackpot with this book! What a wonderful, creative, and informative book - as well as being fun to read! 

Tons of great full color photos. Amazing original recipes, and - I loved the pages with interviews and blurbs with restaurant chefs! That was a nice added touch. I even loved the introduction! How many times can you say that about a cookbook? How many times have you even read the introduction of a cookbook?

Well I flagged so many recipes, but here are a couple I loved -

I love squash and am always up for new ideas of how to use it!


And I love burritos! They are so easy and fun to make. Here's one I never thought of -


All the ingredients in this book are pretty easy to obtain too. They are not obscure items that you have to go to a special store for. This book is NOT totally a vegetarian book - there are recipes for chicken and seafood. Of course I would leave those out or replace them with tofu LOL. But they are there if you want them.

If you are a vegetarian like me or are just looking for some fresh healthy ideas for veggies - look no further. This is THE PERFECT BOOK!
